This spice blend is made up of cumin, cinnamon, black peppercorn seeds, green cardamom pods, and star anise, and it’s then lightly roasted to bring out the locked flavors and aromas that are characteristic of authentic Swahili pilau masala.
Pilau rice is a dish that is made by cooking rice with pilau masala, along with meat, vegetables, and/or stock, depending on the individual recipe. The rice dish known as Pilau, which is also referred to as Pilaf, Pulao, Pelau, and Palaw, has its roots in Persia. The Persian philosopher Avicenna penned countless recipes, many of them were for pilaf, and he included them all in his works. It is generally agreed that he is the “father” of modern pilau, sometimes spelled pilaf.
